Veal Tortellini with Creamy Mushroom Sauce
Crazy easy, this tortellini is the ultimate weeknight comfort food.
500g veal tortellini
250g button mushrooms, thinly sliced
1 large rasher of bacon (around 100g), diced
1 large handful of spinach (optional)
What you need to do
Cook the bacon over low heat. Add a splash of olive oil to a pan. Add the diced bacon and cook over low heat until it starts to crisp.
Add the mushrooms. Add the mushrooms are and cook until they’re sautéed, this should take 5-8 minutes.
Meanwhile, boil your tortellini.
Add the cream. Add the cream to the pan with bacon and mushrooms. Stir slowly as the cream heats through. (There’s an option here to reduce the amount of cream if you feel like keeping it light)
Finish your pasta. Drain your tortellini, and it to the pan along with the spinach. Wait a few moments until the spinach has reduced down and serve with grated parmesan.
